Using traditional cold-press extraction below 27°C, the oil retains its natural aromatic compounds and polyphenols. Remaining unfiltered, it maintains body, texture, and authenticity—never stripped or industrially refined.

Flavor Profile

Bright and expressive, this extra virgin olive oil opens with notes of fresh-cut grass and green olive, followed by subtle artichoke and wild herb undertones. The finish is clean, lightly bitter, and gently peppery—hallmarks of premium, high-phenolic Koroneiki oil. With an acidity of just 0.2%, it offers both elegance and strength.
