Our Wild Thyme Honey is produced by fourth-generation beekeeper Athanasios Manokas and his son Niko, who studied beekeeping at the University of Athens. Together, this father-and-son team tends to hives surrounded by wild herbs, ancient thyme, and Mediterranean flora — creating one of the most aromatic and distinctive honeys in the world.
Thyme honey has been cherished since ancient times for its bold, floral character and natural origin. This honey is made from wild thyme blossoms that thrive in the dry, rocky soils of Southern Greece, far from pollutants or pesticides.
With its light golden color and intense herbal aroma, this honey is a true expression of the land — shaped by the indigenous herbs, mountain air, and the unique climate of the Laconian countryside.
