Harvested high in the mountains of Arcadia, Greece, our Vanilla Fir Honey is one of the world’s rarest honeys. It is collected in limited quantities from the black fir forests of Mount Mainalon, a remote and biodiverse region reaching up to 1500 meters in elevation.

This exceptional honey is PDO-certified (Protected Designation of Origin) — the only Greek honey with this status — and is known for its naturally smooth, creamy texture and distinctive pearlescent streaks that resemble vanilla. Its name reflects this visual quality, not an added flavor.

Light in color and luxuriously thick, Vanilla Fir Honey is a raw honeydew honey with a refined resinous finish and remarkably low sugar content. Uniquely, it does not crystallize, which means it stays smooth and spreadable without any processing — a natural rarity in the world of honey.

Produced by fourth-generation beekeeper Athanasios Manokas and his son Niko, this honey reflects generations of craft and an intimate relationship with the land. The Abies Cephalonica trees that populate the high-altitude forests of Mount Mainalon create a unique microclimate where this honey can develop its naturally low sugar content, pale hue, and rich texture. With each harvest, only small batches are collected — making every jar part of a truly rare tradition.
