Harvested from the high-altitude black fir forests of Mount Mainalon in Arcadia, Greece, our Vanilla Fir Honey is among the rarest honeys in the world. This PDO-certified (Protected Designation of Origin) honey is the only Greek honey to hold this designation, collected at elevations reaching 1,500 meters in a remote and biodiverse mountain ecosystem.

Unlike traditional floral honeys, this is a raw honeydew honey, produced when bees collect honeydew found in fir forest environments dominated by the Abies cephalonica tree. It is known for its remarkable pearlescent highlights and naturally thick, creamy texture. The “vanilla” name refers to this distinctive appearance and subtle aromatic character — no flavors or ingredients are ever added.

Light in color with a refined, resinous finish, Vanilla Fir Honey is distinguished by its naturally low glucose content. This unique composition allows it to remain smooth and resistant to crystallization without the use of heat or processing — a rare natural characteristic among honeys.
