Ingredients
For the Chicken & Potatoes
-
4–6 bone-in chicken thighs or legs
-
5–6 medium potatoes, peeled and cut into wedges
-
4 garlic cloves, minced
-
Sea salt and freshly ground black pepper, to taste
For the Lemon-Dijon Sauce
-
½ cup Laconic Foods Extra Virgin Olive Oil
-
Freshly squeezed juice of 2 lemons
-
2 tablespoons Dijon mustard
-
1 tablespoon Laconic Foods Greek Oregano
-
½ cup water or chicken broth
Instructions
1. Preheat the oven
Preheat your oven to 400°F (200°C).
2. Prepare the potatoes
Arrange the potato wedges in a large roasting pan. Season with sea salt and freshly ground black pepper.
3. Add the chicken
Nestle the chicken pieces among the potatoes, seasoning generously with salt and pepper.
4. Prepare the lemon-Dijon sauce
In a bowl, whisk together the extra virgin olive oil, freshly squeezed lemon juice, Dijon mustard, minced garlic, and Greek oregano until beautifully combined.
5. Bring everything together
Pour the lemon-Dijon mixture evenly over the chicken and potatoes, making sure everything is well coated. Add the water or chicken broth to the roasting pan.
6. Cover and roast
Place a sheet of oven-safe parchment paper over the chicken and potatoes, followed by aluminum foil, sealing it around the edges of the pan.
Roast for approximately 45–60 minutes, until the chicken is nearly cooked through and the potatoes are becoming tender.
7. Uncover for the golden finish
Carefully remove both the foil and parchment paper for the final 15 minutes of roasting.
Allow the chicken and potatoes to develop a beautiful golden color while the lemon-Dijon sauce becomes slightly richer and more concentrated.
The chicken should reach an internal temperature of at least 165°F (74°C), and the potatoes should be fork-tender. Cooking times may vary depending on the size of the chicken pieces.
8. Serve and enjoy
Transfer to a serving platter or bring the roasting pan straight to the table. Spoon the fragrant lemony pan juices over the chicken and potatoes.
Serve warm, with a fresh Greek salad and crusty bread to soak up every last drop of that delicious sauce.
A Little Tip from Our Greek Kitchen
One of our favorite family cooking techniques is covering the roasting pan with parchment paper, followed by aluminum foil.
The parchment creates a barrier between the food and foil, while the covered pan helps retain moisture, keeping the chicken tender and the potatoes beautifully soft.
Removing both during the final 15 minutes allows everything to develop that irresistible golden finish.
Be sure to use parchment paper rated for your oven temperature and keep it away from exposed heating elements.
The Secret Is in the Sauce
What makes this recipe especially delicious is the combination of fresh lemon juice, extra virgin olive oil, Greek oregano, and a touch of Dijon mustard.
The mustard helps bring the ingredients together, creating a wonderfully tangy, savory sauce that coats every piece of chicken and potato.
It's a small addition that makes a beautiful difference.
