Ingredients
-
3 medium zucchini (about 1½ lbs), coarsely grated
-
7 oz (200 g) feta cheese, crumbled
-
2 large eggs, lightly beaten
-
½ cup all-purpose flour, plus more if needed
-
3 green onions, finely chopped
-
2 tablespoons fresh dill, finely chopped
-
2 tablespoons fresh mint, finely chopped
-
1 teaspoon Laconic Foods Greek oregano
-
2 tablespoons Laconic Foods Koroneiki Extra Virgin Olive Oil, plus additional olive oil for shallow frying
-
¼ teaspoon freshly ground black pepper
-
Salt, if needed (feta is naturally salty)
For serving:
-
Traditional Greek tzatziki
-
Fresh lemon wedges
Instructions
1. Prepare the zucchini
Wash and coarsely grate the zucchini. Place in a colander, sprinkle lightly with salt, and let sit for 15–20 minutes. Transfer to a clean kitchen towel and squeeze firmly to remove as much moisture as possible. This is the secret to perfectly crispy fritters.
2. Combine the ingredients
In a large mixing bowl, combine the drained zucchini, crumbled feta, green onions, fresh dill, mint, Greek oregano, and black pepper.
3. Prepare the mixture
Add the beaten eggs, 2 tablespoons of Laconic Foods Koroneiki Extra Virgin Olive Oil, and flour. Mix gently until combined. The mixture should be moist but firm enough to hold its shape. Add a little more flour if necessary.
4. Shape the fritters
Using a tablespoon, scoop portions of the mixture and gently flatten into small patties.
5. Cook until golden
Heat a shallow layer of olive oil in a large skillet over medium heat. Fry the fritters in batches for approximately 3–4 minutes per side, until golden brown, crisp, and cooked through. Avoid overcrowding the pan.
6. Drain and serve
Transfer to a plate lined with paper towels to absorb excess oil. Serve warm with traditional Greek tzatziki and fresh lemon wedges.
